Another reason I’m relieved there has been a change.
And an interesting article here.

Tonight I’m making guacamole. Any recipes which have avocados {many} as a primary ingredient would be appreciated…

    Mmmm – I love guacamole!! Man, now I’m going to want some and the avocados are not plentiful here this time of year.

    My recipe is:
    * 3 avocados – peeled, pitted, and mashed
    * 1 lime, juiced (i use lime juice)
    * 1 teaspoon salt
    * 1/2 cup diced onion
    * 3 tablespoons chopped fresh cilantro (or to taste)
    * 2 roma tomatoes, diced
    * 1 teaspoon minced garlic
    * 1 pinch ground cayenne pepper (optional)

    In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

    Note: I plop one of the pits back in there while chilling – it keeps the guacamole from getting brown. I also always double or triple the recipe depending on how many of us there are… hubby and I scarf this amount down ourselves!

    I actually made guac saturday with lots of fresh lemon juice, chopped onion, fresh red salsa, salt, pepper and loooooove. : )

    I don’t have any other avo recipes for you lovey but would sure like to know the smoothie recipe you mentioned in earlier post.

    Lately Simon will eat anything as long as I roll it up in a tortilla. I don’t know how easy it might be for you to get tortillas over there, but I’ll spread a mushed-up avocado on one, then top it with scrambled egg and cheese. Could you give Minh a spoon and have him eat out of an avocado just cut in half? That’s a big hit here!
